What's cooking?

Lately, I've been hooked on veggie sandwiches. I like how filling and low calorie they are. However, I'm asking for ideas for low calorie lunch ideas. I know I'l get bored with the same stuff over and over. Jake is happy to eat the usual kid stuff -- pb&j, chicken nuggets, soup, hot dogs, etc. I have a hard time justifying making anything for just me that takes more than 10-15 min at lunch. I am in a lunch rut, I guess. What do you like to eat for lunch? I don't want to be hungry again in an hr, either.

Soup is wonderful and usually very low calorie.

While it's not the lowest calorie lunch, I make my own lunchables -- I take one slice of cheese and cut it in thirds - put one third cheese on top of a cracker and a little bit of ham or turkey on top of that and then eat my lunchable. They are filling and you only need maybe three. I add some cottage cheese with pineapple on top (or a tomato with the cottage cheese) or have some other fruit. It's a tasty lunch.

My current favorite lunch is spinach, grapes and sliced almonds. As long as you have a grape in every bit you don't need any dressing! Yum! What veggies are you putting on your sandwiches? -Jen

I don't really have any good ideas. I usually just eat our leftovers. The main deal is to just prepare the day before or the night before but I'm not very good at that.

My favorite veggie sandwich contains cucumber slices, sprouts, and no-fat cream cheese on two slices of rye bread.
Today for lunch I had leftover lasagne, blackberries, and vanilla greek yogurt.
