Cornbread anyone?

I made the attempt yesterday to make cornbread from scratch. It went okay, but I didn't end up liking the bread that much.

The children didn't mind so much since they drowned their pieces in butter and honey, but no one loved it. So I'm wondering, does anyone have a decent recipe for cornbread from scratch? I have a ton of cornmeal and would like to use it. Or if you have other recipes that involve cornmeal, please let me know.

We have a cornbread recipe that we LOVE. It may be the one you tried, though. It's in the family cook book and it's on page III-4 (cousin's corn bread). It tastes like cake... :)

I don't like cornbread at all--too dry! Even the ones that claim they are moist are still too dry. Although, if they taste like cake...maybe I'll try that one. You can use cornmeal on the bottom of your pizza dough.

I was going to say the same thing Adrianne did -- spread a little out when you are making the dough for pizza. It's pretty good that way.
I have never made cornbread from scratch - weird, I know, but I am not a big fan so I don't know for sure.
I do know that Amy is one terrific cook and so I'd give her recipe a try.

mmm I love corn bread. My friend made some for one of our singles ward activities.. I will have to get it from her. She says its an original Nebraska Corn Huskers recipe. Its delicious! I will see if I can get the recipe.

You mean that an Iowa person would use a Cornhusker recipe? Of course, you married one, so I guess that is not so hard to understand. All good Iowans have spent good time in Nebraska or they are still wanting.

I'll try a Nebraska recipe, doesn't mean I'll live there. Iowa's bad enough, Winters are too harsh. I'm a tropical girl and would prefer living South anyday.
